Look at the DCs for Fold Space. Those are some pretty high requirements unless you're playing some maxed out Force Wizard and even then you'll probably need some help in the form of levels, crazy ability scores, or abusing allies. While it may be useful for some personal transport movement getting to reliably move a Colossal sized object is not something normal people should be doing. This is where you need to check your expectations because the kind of character who could routinely do this would be close to a gods power level.
Now what would make Fold Space your device for "instantaneous interstellar travel" is the Folded Space Mastery talent which pretty much should never be an easy talent to get. If you read a bit of the EU the Aing-tii certainly do exhibit the ability to instantly travel just about anywhere but for anyone else to get that talent should almost never happen. If you want it you're going to need to make 13th-level and take one of those tier-3 Force Using PrCs to get the talent; at that point you should be a major mover and shaker in the galaxy and your power can easily exceed what we mortals can understand.
I'm not overly convinced that instantaneous transport is such an obscene thing when you're looking at the levels needed to make Folded Space Mastery w/ Fold Space an easy enough roll that you could even take a huge object. I mean when it comes to gaming most trips are going to go "at the speed of plot" regardless what the PC's hyperdrive rating actually is. If you've got a x0 hyperdrive you're arriving as much ahead of x1 hyperdrive as that x1 hyperdrive beat the x2 hyperdrive; there are times minutes may count but getting there faster often isn't a huge advantage unless you are actually racing the other side for something.
...SteveO did actually come up with an adventure idea based around a ship that can fold space that peaked my interest and seemed decently balanced.
My interest is piqued.
The ship in question was going to the 'prize' for completing a high level adventure and rescuing it from Imperial research. One of the interesting things about the ship will be that its primary 'hyperdrive' would actually be using Fold Space as the model and that is also going to be used to escape the subterranean base's self destruct (another ship would need to fly out the main shaft ala the second Death Star). The drive will have a cooling off period and can still require astrogation checks to help keep a x0 drive from blinking around a fight.
Now besides the Fold Space based hyperdrive the ship is of course sapient and fully aware of what is going on with itself and is ultimately in control of those special functions. Where things go to the next level is that while it will be discovered trapped someplace for centuries it is actually a ship from the future with a time travel function. This is used to go and 'correct' certain things in the past and at the PC's level this can mean finding those once in a generation challenges that should be appropriate for them. This last function may go against Astrophysics as well know them but there are already plenty of things in StarWars that do that.
