the way this reads (to me) is that you have to have the Block talent.  It looks like it's an alternate use of the talent instead of a replacement.

Keep in mind that if you're going by the Saga index spreadsheet, then I can see why you might think that...the actual talent from the Legacy Era book says, "You have received additional training in the use of cortosis gauntlets (see page 183). You can use the Block talent, even when not armed with a lightsaber, provided you are wearing a cortosis gauntlet.  If you successfully block an attack while wearing a cortosis gauntlet, the attacking lightsaber is deactivated."

Cortosis Defense is an Imperial Knight talent that allows you to make an opposed unarmed attack vs. a lightsaber, but does not require you to have the Block talent.

The Cortosis Defense talent is used to improve the default use of the Cortosis Gauntlet.  That is to say it improves things when you ready an action to intercept a lightsaber attack using the gauntlet.

Yes, thank you for pointing that out...I was inadvertently combining the stat block for the cortosis gauntlet with the Cortosis Defense talent

With that Cortosis Gauntlet how you use it is actually important.  Using with the Cortosis Gauntlet Block talent and you just slow down the lightsaber wielder's attacks as he'll need to spend a swift action to reignite the lightsaber.  Use the Gauntlet with the ready action to intercept the blow and you'll shut the lightsaber down for a FAR longer period of time giving you a good edge if the lightsaber wielder is unprepared for it.
