As a hazard Vacuum is described on pg 253 of the SECR as CL 8 hazard. Now the attack against FORT at +20 is nasty at moving you down the CT and missing still moves you down the CT but that does give you a brief window before you'd fall unconscious. In really life as long as you could find a way to breath being in a vacuum isn't super lethal as our bodies are designed to hold in the pressure. Perhaps the effects of losing pressure are exponential but there are creatures that go through a much greater change in pressure regularly.
(When I said "in Saga Edition", I meant the game system as a whole.)
Like you noted, vacuum is considered to be an CL 8 atomospheric hazard in the CRB.
In the JATM there is a Force Regime called Oxygen Bottle. Succeeding at it gives the user a bonus against inhaled poisons and non-corrosive atmospheric hazards for the next 24 hours. The top tier of success (UtF 38+) makes the user immune to inhaled poisons and non-corrosive atmospheric hazards - which includes vacuum.
Any cautious Jedi/Force-sensitive who has learned Oxygen Bottle would use it daily while on board a starship that's travelling in space.
