I don't think I will be able to create any stats for you, but if you aren't a stickler for canon, then I would suggest creating your own species.....
Though Rinocerans are towering in stature and stregth, Rinocerans are very slow to temper, and are considered the most patient in the galaxy.  Few Rinocerans ever progress past farming, but force-sensitive Rinocerans make Jedi with great wisedom and calm.
